Step 1

To roast the bell peppers, cut in half, remove the stems and seeds, place cut side down on a baking sheet. Top with 1-2 tbsp olive oil, salt and pepper.

Step 2

With oven set to broil, roast the bell peppers until charred, 4-6 minutes. Remove from oven, cover with foil and let steam for 10 minutes.

Step 3

Remove the charred skin, it's okay if it's not fully removed. Chop up the peppers into smaller pieces. If you want to avoid all this extra work, you can used jarred roasted bell peppers.

Step 4

To a food processor, add the feta cheese, chopped bell peppers, the zest and juice of the lemon, crushed red pepper(use more for a spicier dip), garlic cloves, smoked paprika, onion salt, salt, black pepper and fresh dill and two tablespoons of olive oil. Process until fully mixed and combined. Taste the dip and adjust any seasonings if needed to your liking.

Pour the dip into a plate or bowl, optionally garnish it with more crumbled feta and freshly chopped dill.

Step 6

Serve with pita chips or crusty bread and enjoy.
