1 juice of lime,

Wash & rinse 1 cup of rice until water runs clear.

1 cup long grain white rice, washed & rinsed

In a large pot/pan, add the oil on medium high heat. Once hot, add the rice & toast for 1-2 minutes or until it starts getting a slightly golden color.

Add in the onion, garlic & Serrano pepper (I cut the pepper in half, not going through the stem to keep it as one piece). Cook, stirring to mix thoroughly for 2 minutes.

Add in the cumin & salt, cook for 2 more minutes.

Add in the 2 cups chicken broth or the 2 cups water mixed with the chicken bouillon paste. Add in the juice of 1 lime & stir to combine.

Once the rice is boiling, cover with a lid, reduce heat to low & cook for 15 minutes.

Turn off heat, KEEP POT COVERED, let sit for at least 15 more minutes before serving.

Right before serving, stir in the cilantro! Taste for salt if needed.
