To a large skillet on medium high heat with 1-2 tbsp oil, add in the sliced onion & jalapeños(remove the seeds if you’re a spice baby). Mix thoroughly & let set untouched for 4-5 minutes or until they start getting charred on the bottom.

Stir to combine, add in the spices & cook for 2 minutes.

Add in the chopped tomato & cook for 5-7 minutes.

Slice the Queso Panela into thick slices, about 1/4 of an inch. Add them to a hot, non stick skillet/comal & cook for 2-3 minutes per side.

To the same skillet, warm up your tortillas, corn or flour, then prepare your tacos with the toppings of your choice.
