Greek-ish Salad

This is my take on a classic Greek Salad, I added the "ish" at the end because it may not be the authentic way to make a greek salad, yet it is still incredibly delicious.

Step 1

To a large measuring cup or mason jar add the olive oil, red wine vinegar, lemon juice, mustard, oregano, garlic powder, crushed red pepper, salt and pepper. Mix to combine and set aside.

Next prepare all of the veggies, you can chop these all up as roughly or finely as you'd like.

If you're planning to serve it all at once, add the chopped cucumbers, red onion, tomatoes, olives, peperoncini, feta and dill to a large bowl, pour in and 1/4 cup of the dressing and mix to combine. Serve with the remaining dressing on the side for those that like more dressing on their salad.

Step 4

Alternatively you can prepare smaller bowls of the salad as you go by keeping all ingredients separate so you can an easy to make greek salad whenever you'd like. If you mix everything all at once but don't eat right away, by the next day everything will get too soggy.
