Chicken Alfredo Lasagna

My take on the usual tomato based meat sauce lasagna but made with ground chicken, lots of cheese and lots of Alfredo Sauce.

2 pounds ground chicken

2 tsp Italian seasoning

2 tbsp basil, chopped

¼ cup parsley, chopped

1 ½ cups parmesan cheese

4 ½ cups Alfredo sauce

2 boxes lasagna noodles

3 cups mozzarella cheese, shredded

32 oz ricotta cheese

2 tbsp basil, chopped

¼ cup parsley, chopped

1 ½ cups parmesan cheese

4 ½ cups Alfredo sauce

2 boxes lasagna noodles

3 cups mozzarella cheese, shredded

Step 1

To a large pan set to medium heat, add the olive oil and the ground chicken. Flatten it out to an even layer and cook for 3-4 minutes.

Add in the shallot, 2 tsp kosher salt, 1 tsp black pepper, 1 tsp Italian seasoning, 1 tsp garlic powder, 1 tsp onion salt and 1 tsp crushed red pepper. Mix to combine and cook for another 2-3 minutes.

Step 3

Add in the spinach and cook for 6-8 minutes or until the spinach is fully wilted. Turn off the heat and set aside.

To a large mixing bowl add in the ricotta cheese, chopped basil and parsley, 1 tsp Italian seasoning, 1 cup parmesan cheese and 2 tsp black pepper. Mix to fully combine.

Preheat oven to 350 degrees.

Using a 9x13 inch baking pan, spread an even layer of Alfredo sauce on the bottom followed by a layer of lasagna noodles. From here layer the rest of the lasagna with ground chicken, ricotta, mozzarella and sauce and again with noodles, ground chicken, ricotta, mozzarella and sauce. Continue layering until you have used up all ingredients making sure to end the lasagna with noodles, sauce and sprinkling all over with about 1 cup of mozzarella cheese and 1/2 cup parmesan cheese.

Step 7

Cover with foil and bake at 350 degrees for about 35-40 minutes covered. Remove the foil and continue baking for another 10-15 minutes.

Step 8

Let the lasagna cool down for about 15 minutes before slicing into it. If you cut it immediately out of the oven you will have a soupy lasagna mess.

Step 9

Serve with more grated parmesan and enjoy!
